Harvest Monday~Kimchi

I was going to publish this as a Wordless Wednesday post but after visiting the Harvest Monday bloggers today i decided to join in for the first time. I enjoyed seeing everyone's harvests but was especially inspired by the Kohlrabi Kimchi that A High Desert Garden is showing off today. Hope she shares her recipe ; )

This miniature bok choi volunteered in my garden last fall. It was so green and healthy that i let it grow probably longer that i should have. It was almost two and a half pounds when i finally harvested it! Normally i would have been wondering what to do with a two and a half pound bok choi but some of my blogger friends have been posting about kimchi lately. And i had some nice fat scallions to harvest. And FINALLY i was able to harvest ripe Aleppo peppers from the plants that grew from seeds from Michelle's garden.  A little Hawaiian salt, garlic, ginger, fish sauce later and you can guess the happy ending of this pungent story.

Wow it's great to see your 1st Harvest Monday post! Your kim chi looks ono! I'm so addicted to kim chi - good thing it's a really healthy food.

LOL Jane i was just out mowing and i realized i forgot to plug into Mr Linkey! See, i'm just not very good at this kind of thing.
I've been a kimchee fan for a long time but never thought to make my own until you inspired me. Turned out better than most but not as good as some. Needs a little something.
And really, is it Kim Chee or Kimchi or Kimchee or what??? Good by any name, i guess ; ))

Wow, that 2.5 pound bok choi is a monster! And a bonus that it volunteered. We had a 10oz one the other night that fed two of us nicely.

Kimchi - looks loverly! We are checking our cabbage daily, it's almost ready. No peppers from our garden yet though; sob ....

They spell it every which way - I'm just a dumb haole-girl and have no clue!! That's cool that you added fresh hot peppers instead of ground/dry hot pepper. I have napa soaking in salt from yesterday and I need to finish making it into kim chi tonight. I'm going to try making it with fresh peppers. Post your recipe!! I'm not kidding...I absolutely love this stuff - Mac's kohlrabi kim chi looked ono!

K Jane, it's pretty minimalist, not really a recipe, but i'll post it for you anyway. Chop bok choi, layer in bowl with hawaiian salt, let it sit for four or five hours. Mix it around with your hand once in a while. Rinse thoroughly. Grind up a clove or two of garlic, a knob of minced ginger, two or three chile peppers and 2 tablespoons of fish sauce in a blender. Mix with sliced scallions and rinsed bok choi. Pack into quart jar and press on cabbage until it is all submerged in the liquid. Let it sit on the counter for three or four days or until it starts to taste good.

Thanks for the recipe Julie! Now, about that 'hawaiian salt' - is 18.50 USD for 12oz worth the taste experience compared to regular ole Florida Publix Sea Salt? I could just run up the road a bit and color it with some Georgia red clay? Kidding!

Hey, welcome to Harvest Monday! I really enjoy looking at what other people are getting. I've heard of Kim Chi but have never tried it. Might have to take the plunge! Oh, if this is how big your miniature bok choi gets, can you imagine if you grew bok choi that isn't a miniature??? Ha!
